Shrimp medley with fig and whole rice
Ingredients
150g large pre-cooked shrimp,
3 fresh figs,
1 avocado,
4 lettuce leaves,
125g black rice,
5 tbsp. of organic honey mustard and cayenne onion sauce.
Description
Boil a large pot of salted water, throw in the black rice and cook for 40 minutes.
Sieve the rice, put it under cold water and let it strain thoroughly.
Shell the prawns and cut them into pieces.
Cut the avocado in half, peel it, remove the core and cut into cubes.
Sprinkle with lemon juice and a few drops of chili paste. Salt.
Wash the figs, dry them and cut them into pieces.
Wash the lettuce and put it in 4 individual bowls.
Pour the honey mustard and cayenne onion sauce on the rice and mix well.
Add the shrimp, diced avocado and figs. Mix very gently.
Divide the salad into the cups and bring to the table.
