Tomato tartare with herbs

Ingredients
10 large tomatoes,
1 shallot,
1 bunch of basil,
olive oil,
balsamic vinegar,
salt, pepper
Description
Blanch the tomatoes, cut into quarters and remove the seeds. Put to press as long as possible (overnight).
Rehydrate with olive oil. Season with salt, pepper and add the chopped shallot and basil as well as a few drops of balsamic vinegar.
Arrange into round molds for the presentation and drizzle with olive oil before serving.
