Fresh herbs (basil, sorrel, chives, parsley, etc),
1 garlic clove,
1 tbsp. mustard,
1 egg yolk,
1 tsp. wine vinegar,
20cl extra-virgin olive oil,
salt, pepper.


Chop the bunch of herbs in a mixer. Add the garlic, mustard, egg yolk and vinegar. Blend. Pour the olive oil through the opening of the blender. Add salt and pepper.
Serve with warm or cold fish, or to dip your vegetables.
