1 glass (small) of rapeseed oil,
1 egg yolk,
1/2 tbsp. of mustard,
juice of 1 lemon,
salt and pepper.


In a bowl, put 2 egg yolks, half a tablespoon of mustard, a pinch of salt and pepper. Whisk the mixture, slowly adding the rapeseed oil. Pour the lemon juice, while still whisking the mayonnaise.
Excellent with a fish stew!
