Ingredients
1.2kg of small cleaned squid,
100g coconut flakes,
1 big apple,
2 big onions,
2 cloves of garlic,
3 tbsp. grape seed oil,
1 tbsp. curry powder,
1/2 tsp. of cinnamon,
half a can of peeled tomatoes,
salt, pepper.
Description
Cut the squid into strips, leave the tentacles.
Peel the apple and cut into small cubes.
Chop the onions and garlic.
Let 3 tbsp. of grape seed oil fry in a skillet and when hot, throw in the onions, garlic, apple and squid. Sauté for 8-10 minutes.
Stir frequently. Sprinkle with grated coconut, curry and cinnamon. Stir for 2 minutes over low heat.
Season with salt and pepper, add the can of crushed tomatoes. Put a lid on the skillet and cook over low heat for 45 minutes or until the squid becomes tender.
Serve with rice.
